Thus, in the dairy systems of the Basque Country and Béarn, characterized by strong pastoral pressure, the work of the shepherd is focused on milking, cheesemaking, and monitoring the herd makes it possible to avoid mixing with neighboring herds. The use of the mountain is optimized in the best way possible thanks to the separate management of dairy ewes, dry ewes (ewes "manes") and lambs, and separate grazing circuits according to the weather and the season.
When it comes to suckler systems, which are by definition more extensive, the work of the shepherd will be essential for optimal use of all areas of the mountain pastures throughout the season, ensuring the safety of the herd even in the most rugged parts.
